Ingredients
For the Dough
- 2½ cups (325g) gluten-free all-purpose flour (with xanthan gum)

- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- ¾ cup (180ml) ice-cold water
- 1 tablespoon apple cider vinegar
- 2 tablespoons melted unsalted butter
For the Butter Block
- 1 cup (225g) cold unsalted butter
- 2 tablespoons gluten-free flour

Instructions
Step 1: Prepare the Dough
In a large bowl, whisk together the gluten-free flour, salt, sugar, and baking powder.
Mix the ice water with the apple cider vinegar and melted butter.
Gradually pour the wet ingredients into the flour mixture while stirring with a fork.
Mix until a soft dough forms.
Transfer the dough onto a lightly floured surface and knead gently for about one minute. Do not overwork the dough.
Shape it into a rectangle, wrap in plastic wrap, and refrigerate for 30 minutes.
Step 2: Make the Butter Block
Place the cold butter in a bowl.
Sprinkle the gluten-free flour over the butter.
Mix until smooth but still cold.
Spread the butter into a 6-inch square on parchment paper.
Wrap and refrigerate for 30 minutes.
Step 3: Lock the Butter Inside
Roll the chilled dough into a rectangle about 12 x 8 inches.
Place the butter block in the center.
Fold the dough over the butter like an envelope.
Pinch the edges tightly so the butter is completely enclosed.
Step 4: First Fold
Roll the dough into a long rectangle about 18 inches long.
Fold one-third of the dough toward the center.
Fold the remaining third over the top like a letter.
Wrap and chill for 30 minutes.
Step 5: Repeat the Folding
Repeat the rolling and folding process five more times.
Always chill the dough for 30 minutes between each fold.
These folds create the hundreds of flaky layers that make puff pastry so light.
Step 6: Final Chill
After the last fold, wrap the dough tightly.
Refrigerate for at least one hour before using.
You can also freeze it for up to three months.
Baking Instructions
- Roll the pastry to about ⅛ inch thick.
- Bake at 400°F (200°C).
- Small pastries: 18–22 minutes
- Large pies or tarts: 30–40 minutes
- Bake until deeply golden and crisp.
