Easy No-Knead Brioche Rolls Recipe

These soft brioche rolls are light, fluffy, and slightly sweet. The best part is that you don’t need a mixer or kneading. The dough is very soft and moist, which helps create a tender and airy texture. These buns are perfect for burgers, sandwiches, or breakfast egg sandwiches.

Ingredients

  • 4 cups (512 g) bread flour or all-purpose flour

  • 2 teaspoons salt

  • 2 teaspoons instant yeast

  • 2 tablespoons sugar

  • 1 ⅓ cups cold water

  • 1 egg

  • ⅓ cup milk

  • 4 tablespoons butter

Egg Wash

  • 1 egg

  • 1 tablespoon water


Instructions

1. Mix the Dry Ingredients
In a large bowl, whisk together flour, salt, sugar, and instant yeast.

2. Prepare the Wet Ingredients
In another bowl, whisk the cold water and egg together.

3. Heat Milk and Butter
Place the milk and butter in a small pot and heat until the butter melts. Pour this warm mixture into the water and egg mixture. It should feel slightly warm, not hot.

4. Make the Dough
Pour the wet ingredients into the flour mixture. Stir with a spatula until a sticky dough forms. Do not knead the dough.

5. First Rise
Cover the bowl and place it in a warm area. Let the dough rise for about 2–3 hours until it doubles in size.

6. Divide the Dough
Punch down the dough and place it on a lightly floured surface. Divide it into 8–10 equal pieces.

7. Shape the Rolls
Shape each piece into a smooth ball and place them on a baking tray lined with parchment paper.

8. Second Rise
Cover lightly and let the rolls rest for 30–45 minutes until they become puffy.

9. Prepare for Baking
Preheat the oven to 425°F (220°C). Mix the egg and water for the egg wash and brush it on top of each roll.

10. Bake
Bake the rolls for 15–20 minutes until they turn golden brown.

11. Cool and Serve
Let the buns cool on a wire rack before serving.
